Spatula Diaries: Stay cool with this watermelon-mint smoothie

Cool, sweet watermelon is one of the best trade-offs of the sweltering Louisiana summer. It’s only fitting that as we head closer to the Fourth of July holiday—when watermelon peaks—that we think of as many ways as possible to enjoy this magical, chin-dripping fruit.

We love our watermelon in the Bayou State. Two separate watermelon festivals take place, one on July-27-28 in Farmerville that’s more than a half-century old, and one this weekend in Beauregard Parish, which is home to watermelons grown in the sandy soil of Sugartown. Residents here claim their watermelons are the best in the world.

The flavor of watermelon is one of the most refreshing flavors around, so of course it does well in a fruit smoothie. Imagine going for a morning run, coming home soaked with sweat and cooling off with a smoothie redolent with watermelon and mint. Counterbalanced by plain yogurt and honey, it’s a healthy take on breakfast and a perfect expression of summer.

Watermelon Mint Smoothie

4 cups cut watermelon
2 cups ice
1 cup plain yogurt
2 tablespoons honey
2 tablespoons chopped fresh mint

Add all the ingredients to a blender or juicer, and pulse to the desired texture. Taste, adjusting for sweetness.
