Keep your summer party chill with this simple cocktail.

The Coconut Mojito
(for 12 servings)
2 cups fresh mint leaves
4 oz fresh lime juice
12 oz simple syrup
36 oz coconut water, chilled
24 oz white rum, chilled
Ice

Muddle the mint, lime juice and simple syrup in a pitcher. Add the coconut water and rum and stir. Chill completely in the fridge. Pour over ice cubes and garnish with lime wedge.
