Spotlight on The Cajun Spoon
Some people know Ryan Grizzaffi as the heavy metal guitarist of the local band The Axes of Evil. The 25-year-old used to have long hair, perfect for headbanging. But he’s cut it short, spending more time in the kitchen and building his very own catering business, The Cajun Spoon.
“I always cooked and loved to be in the kitchen,” he says. “I always had restaurant jobs. I was a manager, a server … I just wanted more out of it.”
Last year, Grizzaffi launched The Cajun Spoon food truck, parking outside venues like The Spanish Moon, selling items like jamburritos (burritos stuffed with jambalaya), hamburgers and snoballs.

“I was serving a little bit of everything, seeing what people in my demographic wanted,” he says.
With high upkeep costs, he decided to move the business away from the food truck world and into catering and concessions opportunities. During the day, The Cajun Spoon now focuses on delivering breakfast, lunch and dinner catering options for businesses. Then, on certain nights, Grizzaffi will bring what he needs to set up at different area bars like The Spanish Moon, serving everything from fried pickles to vegan options like cauliflower wings with a sweet mango sauce.
He says he’s getting interest from a few other local bars, and he’s ready to take the next step in his career. Maybe this year, he could even get to do what he really wants to do.
“I would love to do a metal food truck tour,” he says. “Go play a show, then feed people some stuff, give them some of our flavor. That, to me, would be the best.”
