Prepare for summer with these fruity, light dessert recipes


Summer is right around the corner and that means hotter days, shorter nights and beach trips.

Nothing is better than your toes in the sand, reading a good book and enjoying a good dessert, am I right? But to last all day in the hot sun without feeling tired or bloated, it’s best to steer clear of heavy, sugary options and look more toward lighter, fruity fare.

Food bloggers (even some Baton Rouge-based ones) have created all sorts of bowls, popsicles and sorbets for you to make and pack in your cooler. The best part? Most of these recipes only include a handful of ingredients, which you can easily find on your next trip to the grocery store.

3-Ingredient Cherry Watermelon Sorbet

Local blogger of Emilie Eats, Emilie Hebert, created this sweet sorbet, which also happens to be vegan and gluten free. All you’ll need is frozen watermelon, cherries, water and coconut sugar (this ingredient is optional). Blend it all up and serve it right away, or put it in the freezer to bring out for an evening treat.

It seems like everything is becoming a bowl nowadays, but a smoothie bowl allows you to get your spoon out for a refreshing smoothie texture and lots of toppings. Hebert creates this one with bananas, mango, orange juice, lime, vanilla extract and protein powder (optional). She suggests topping it with mango, lime wedges, granola, coconut, dried fruit, nuts and seeds. It’s refreshing and nourishing at the same time. Plus, the sweet fruits are enough on their own to satisfy your sweet tooth.

Pomegranate Ginger Fruit Salad with Fresh Local Citrus

Maggie Heyn Richardson, the blogger behind Hungry for Louisiana and a 225 contributor, created this fruit salad, which is bursting with flavor. It includes oranges, grapefruit, bananas, blackberries and pomegranate seeds. Richardson adds walnuts, flaked unsweetened coconut, honey, crystalized ginger, lime juice and mint for added flavor. This fruit salad is great to get multiple fruits in one dish, plus a few other ingredients. It’s summer in a bowl.

Fresh Fruit Popsicles

Canadian blogger, Debbie Chapman, is the face behind One Little Project at a Time. She created these colorful fruit popsicles to enjoy your favorite fruits in dessert form. The recipe makes this look easy by chopping up various fruits and placing them in a popsicle mold with apple juice. Don’t forget to place your popsicle sticks in the center of each mold. Freeze and you’re ready to serve.

Two-Ingredient Banana Chocolate Chip Ice Cream Bites

It’s impossible to quit chocolate when we’re talking about dessert. Thankfully for The Baker Mama, we can make these cute, ice cream bites.
