
How to make a Classic Greek marinade

Classic Greek marinade
Yields 3 cups
4 cloves minced garlic

2 tablespoons fresh lemon zest
2 teaspoons dried oregano
1 teaspoon dried mint
1 teaspoon dried thyme
1½ teaspoons kosher salt
1 teaspoon fresh ground pepper
½ teaspoon paprika
¼ cup fresh lemon juice
¼ cup red wine vinegar
2 cups olive oil
- In a large mixing bowl, whisk all of the ingredients together until well combined.
- Carefully pour the classic Greek marinade into a jar or bottle with a tight-fitting lid.
- Place the marinade in the fridge for at least an hour so the flavors can develop. Keep refrigerated until you are ready to use. This marinade will keep in the fridge for up to 2 weeks.
