Dining In: For Mom
Taking Mom out for Mother’s Day is always a treat. There’s no prep work involved, aside from a few phone calls, and there are no dishes to be cleaned.However, making lunch for Mom or the moms in your life can be an even bigger treat and is a really heartfelt way to show a special person how much you care.
We have designed this menu to be so easy that anyone can make it for his or her mom. The salad is a lovely mix of spring greens with roasted beets and oranges. The sweet, slightly tangy orange vinaigrette along with the crunchy, toasted pecans and creamy goat cheese is a lovely way to start off or complete this meal.
As for the main course, making a homemade crepe may seem like a lot of hassle.But crepes are truly as easy to prepare as pancakes, and it takes no time to get the hang of making them.You will find yourself using this crepe recipe again and again, experimenting with all kinds of fillings both savory and sweet. For this special occasion, we use a creamy crab filling. It’s a treat whether stuffed in a crepe, served as a hot dip or tossed into pasta.

To finish off the meal, Tracey has created a recipe for delicious chocolate shortcakes. They are very light, moist and chocolaty without being too sweet.Serve them with berries and your favorite ice cream for a meal your Mom will appreciate and never forget.
