Up close with the Coyote
Coyote Blues got its start six years ago in Lafayette as a small endeavor, but with a new branch in Baton Rouge and major investment on the horizon, managing partner Braxton Moody is sure he can bring this restaurant concept to the next level. If the weekend crowds at the newly-opened Baton Rouge location are anything to judge by, the Coyote Blues team has a winner on their hands. Moody hopes to take Coyote Blues nationwide, as he did with the Outback steakhouse brand. Baton Rouge has been a proving ground for many a national chain, from Cane’s to the aforementioned Outback, and Moody sees an opening for Coyote Blues on the national scene. “We are the only chef-driven dinner-only Mexican restaurant in the market,” he explains. “There’s definitely a niche for this.”
