The Kolache Kitchen rolls out food truck

A campus favorite will expand business with a food truck to capture downtown and late-night business within the next few weeks. Will Edwards of The Kolache Kitchen says the truck, named The Rolling Pin, is already operational and ready to serve almost the entire menu from the brick and mortar location off Nicholson Drive (Map it!).

Edwards says a food truck was in the original business plan when the restaurant popped up 10 months ago, but business got busy quicker than expected, and he had to put the idea on the backburner.

Now, Edwards, a 26-year-old LSU grad from Houston, sees timing and opportunity as good reason to pull the trigger with The Rolling Pin.

“We thought with the growing presence of food trucks here and lack of other food options downtown and at LSU during late-night hours, we would be able to capitalize on that,” he says.

The Rolling Pin has already made a few stops downtown. If everything goes according to Edwards’ plan, the truck will be out every day within “a week or two.”

“We’ll get a schedule and update our location every day on Facebook and Twitter so people will know how and where to find us,” he says. “I might not be getting much sleep over the next few weeks, but it should be a fun learning experience. Having this downtown presence will grow our market.”
