Take home the Ski Queen
Ski Queen, the brand name for the popular Norwegian gjetost cheese, is a fun find. Sold in small blocks wrapped in distinct red, Ski Queen is made from a combination of cow’s and goat’s milk and whey. It’s known for its versatility and nutty brown color, due to the caramelization of milk sugars that occurs during production. This gives it a slight, pleasant sweetness. It’s also got an unbelievably creamy finish and is extremely easy to melt or cook with. Full in the mouth, Ski Queen is terrific served in traditional fashion—sliced thin and served on flat bread. This website is the best I’ve found for recipes and further details. Ski Queen fetches about $6 at Baton Rouge’s Whole Foods Market and is a great cheese for helping kids branch out.
