Taco de Paco rolls out tasty street food

Snowball trucks lumbering down neighborhood streets or stationed in empty lots and street corners create a common summer scene in Baton Rouge, but these transported sweet treats have just been joined by something savory—a bona-fide taco truck. Taco de Paco, owned appropriately enough by the same innovative minds that brought the social media–fueled Ninja Snowballs to the Red Stick—joins a small but growing population of street food vendors in the Capital Area. Although food trucks have been an East Coast phenomenon for decades, the concept behind them has been slower to catch on in the South.
