Smoked Salmon Hash

11/2 lbs. red new potatoes
1/2 cup olive oil
1/2 cup chopped shallots
1/2 tsp. salt
1/4 tsp. black pepper
4 oz. chopped smoked salmon
2 Tbsp. Dijon mustard
1 Tbsp. chopped fresh dill
1/4 cup chopped green onion tops
1/4 cup white wine vinegar

1. Bring a large pot of salted water to a boil.
2. Wash the potatoes and cut them into quarters or sixths, depending on their size. Place them into the boiling water.
3. Cook the potatoes until they are almost done but still have a little firmness to them.
4. Drain the potatoes well and set them aside.
5. In a large skillet, saute the shallots in 3 tablespoons of the olive oil for 2 minutes.
6. Add in the potatoes, salt and pepper and continue to saute, stirring to prevent the potatoes from sticking. The potatoes are done once they become golden on the outside and very tender inside. This takes about 5 to 7 minutes.
7. Whisk together the mustard, dill, green onion tops, white wine vinegar and the remaining olive oil and set aside.
8. Fold the smoked salmon into the potatoes and pour the dressing over everything.
9. Place the smoked salmon hash into a serving bowl and serve warm.
