Scuttlebutt: Folse takes food truck to New York … Stroubes switches chefs … Marcello’s expands into deli operations

Red Stick in the Big Apple: If you have friends in New York, tell them they’ve got a rare chance to get a real taste of bayou cooking. Chef John Folse will be serving some of his signature dishes out of a food truck in NYC this week. The Taste of the Bayou food truck will be in the Big Apple today to mark the second season premiere of the hit History Channel show Swamp People. Folse will be offering dishes such as mallard duck and smoked wild boar sausage, red beans and rice with smoked nutria sausage, and alligator sauce piquante. The new season of Swamp People is set to premiere tonight. Stroubes switches it up: Scott Varnedoe has taken the reins of downtown eatery Stroubes, replacing former executive chef Justin Ferguson. Varnedoe made his bones in the kitchen of New Orleans’ Café Marigny, then went on to head Varnedoe’s Carriage House at The Myrtles Plantation in St. Francisville, which was named as one of the top restaurants in south Louisiana by The Wall Street Journal. The executive change brings about a menu change as well. Whereas Stroubes formerly focused on chophouse-style cuts, its new menu slants more toward seafood and fine-dining options like escargot, popcorn grouper and the foie gras du jour. Molto Marcello: The expanded Marcello’s Wine Warehouse is now offering much more than an excellent selection of liquors, beers and wine; they’re now offering a line of artisan cheese and meats, as well as gourmet crackers and other specialty foods, with a special focus on locally sourced items. Owner Gene Todaro says that they also plan to offer brisket and pulled pork sandwiches on a regular basis, as well as other deli sandwiches, like meatball and turkey subs, with a kosher pickle and a packet of Zapp’s chips on the side.
