Savor fresh eggplant
The season for fresh, hardy summer eggplants is nearly over in the temperate Southern states, but they’re still available on local menus across Baton Rouge. Below are a few local selections that creatively make use of this delectable purple veggie. Beausoleil’s fried eggplant crisps: Fried crispy-crunchy on the outside, while remaining soft and creamy on the inside, this is eggplant done to perfection. Spread a thin layer of sweet Creole sauce on them, and you’ll achieve aubergine nirvana. You won’t even miss the meat. Bay Leaf’s Baghare Baigan: It doesn’t get much more decadent than whole baby eggplant stuffed with roasted spices, then simmered in peanut seasoned coconut sauce. This sweet but savory entrée will satisfy every sense. Ruffino’s eggplant bisque: Ruffino’s take on the traditional shrimp bisque sings with the bold addition of eggplant, perfectly setting off the seafood flavor with andouille sausage and cream. Truly Free Bakery’s grilled eggplant bowl: This bakery wows with their unique “BR bowl” lunches, and the eggplant bowl is a standout, featuring teriyaki, BBQ or salsa-sauced eggplant over quinoa or brown rice.
