Roundup: Kleinpeter goes gold … Galatoire’s gets new executive chef

Surprisingly, it’s got nothing to do with the Tigers: In a move to preserve the taste and vitamin content of its milk, Kleinpeter Farms Dairy is now available in nontransparent gold milk cartons in order to protect the milk from exposure to fluorescent light, which can affect taste in as brief a time as 20 minutes and degrade vitamins within two hours, according to a Cornell University study. The company says the added cost of between four and 10 cents per container, depending on the size of the container, will not be passed on to consumers. Executive decision: Galatoire’s in New Orleans has hired a new executive chef, Michael Sichel, who has spent more than 13 years honing his cooking skills in Provence, France, and in the kitchens of notable restaurants nationwide, including Rubicon with Traci Des Jardins in San Francisco and Gotham Bar & Grill with Alfred Portale in New York. In his new role at Galatoire’s, Sichel will manage one of the largest and busiest fine-dining kitchens in New Orleans, overseeing a staff of more than 30 and preparing the James Beard Award-winning restaurant’s signature dishes.
