Rotolo’s moves toward ambitious expansion

Baton Rouge-based Rotolo’s Pizzeria is in the midst of an expansion plan that will see at least seven new restaurants open by the middle of next year, including its first locations in Texas. A warehouse expansion project in St. Gabriel will also help Rotolo’s spawn an entirely new food manufacturing business.

The pizza chain’s existing food manufacturing facility and warehouse off Iberville Street is doubling in size to about 11,000 square feet, says founder and CEO Mitch Rotolo, with completion expected in February. The facility is being upgraded to include shipping and receiving capabilities, and will also include a new bottling line capable of producing everything from sodas to salad dressings.

The newest Rotolo’s restaurant will open in LaPlace on Wednesday. At 3,500 square feet, the location is a little larger than most of the chain’s restaurants, and it will serve as a regional flagship. Rotolo also says he has signed a three-store deal to open restaurants in Plano, Frisco and Lewisville, Texas. Read the full story via Baton Rouge Business Report.
