Quick and ‘dirty’

Kim Denicola had a simple dream: to shorten the process for making her favorite childhood dish, dirty rice. “I wanted to find a way to get the same flavor my grandmother did without the hassle,” says Denicola. She and her husband David spent most of 2009 perfecting a dry mix that would produce a steaming, savory pot in under 25 minutes. “I’d make notes about what was wrong, adjust the dry seasonings, make notes, and make it all over again,” Denicola says. “The kids were so tired of dirty rice.” Since the Denicolas hit on the right formula, their mix has made it to shelves in two dozen regional stores, including the Bet-R Store and Side of the Road Seafood in Baton Rouge.
