Easter lands this month, and it’s a great excuse to roll out lamb for Sunday dinner. Intensely flavorful and super-versatile, lamb can take on everything from earthy Moroccan spices to cool mint jelly, and that same flexibility makes it a great wine partner. You’ll fare well with rich, Old World mates like Barolo or Tempranillo, or lamb’s classic buddy, Syrah.
Syrah is one the world’s oldest grapes, grown in vast supply in France and in Australia, where it’s the bedrock of the country’s wine industry and known as Shiraz. There are tons of choices among Aussie Shirazes, but in general, you’ll find they feature nice color and characteristic smokiness or spiciness girded by ripe fruit.
Select three for the table and invite your guests to sample each as they savor rosy slices of lamb set off by sides like beet and mint salad and garlic mashed potatoes. Serve these wines between 59 and 64 degrees.

Angoves Red Belly Black Shiraz (2007) • $11
Beautiful in color, this affordable award-winner has smoke along with cherries and a hint of vanilla. It features nice tannins and solid structure. Drink now or toss (gently) in the cellar.
St. Hallett Faith Shiraz Barossa Valley (2006) • $15
From southern Australia, St. Hallett’s Faith features subtle notes of chocolate amid ripe berries. This balanced wine’s texture is smooth and its tannins soft. Another good one to drink now or put up.
Corrina Rayment Revolution Shiraz McLaren Vale (2006) • $16
Big texture is the case here. This unfiltered Shiraz has a chewy mouthfeel and strong tannins. The backdrop is inky and smoky with notes of plum and berries. This is perfect for anyone who gravitates toward big and dry.
