Orange-scented Palmiers – Makes 3 dozen.

2 sheets frozen puff pastry dough
2 cup sugar
2 Tbsps. orange zest
Pinch kosher salt

1. Line two baking sheets with parchment paper and preheat the oven to 425 degrees.

2. In a mixing bowl, combine sugar, orange zest and a pinch of salt.

3. Place a piece of parchment onto a work surface and sprinkle half a cup of the sugar mixture onto the parchment.

4. Place one of the sheets of puff pastry dough on top of the sugar and then sprinkle the top of the pastry with an additional half cup of the sugar mixture.

5. Use a rolling pin to gently roll out the puff pastry into a 9-x-13-inch rectangle, pressing the sugar mixture into the dough.

6. Starting from the long end, begin folding both sides in toward the middle like a scroll.

7. Once the two sides meet in the middle, fold one on top of the other as if you were closing a book.

8. Gently press them together and slice the roll into half-inch slices.

9. Place the slices onto the lined baking sheets and repeat the steps with the remaining sheet of puff pastry and sugar mixture.

10. Bake the palmiers in the preheated oven for five to seven minutes. Switch the baking sheets so the one on the bottom rack can finish baking on the top. Reduce the heat to 400 degrees.

11. Continue baking for an additional five to seven minutes or until golden. Remove the palmiers and place on a baking rack to cool completely.

12. Store in an airtight container. These may be made a day in advance.
