Nectar syrup – This summer favorite is perfect for Halloween

With any luck, we’ll be transitioning to a new season shortly, leaving behind summer and welcoming fall flavors.

But here’s one flavor worth carrying over: homemade nectar syrup.

It’s a mouthwatering, classic New Orleans soda fountain flavor commonly seen at sno ball stands in south Louisiana. It’s easy to make at home, and its rosy color also makes it great for Halloween sweets.

All it takes is simple syrup, a balance of vanilla and almond extracts and some red food coloring. Add cream or milk to make nectar cream, or add seltzer and ice cream for a classic nectar soda. Its appealing flavor tastes like a good bakery smells.

1 cup white sugar
1 cup water
2 tsp. vanilla extract
1 tsp. almond extract
˝ tsp. red food coloring

Combine the sugar and water in a saucepan and bring to a boil. Stir until the sugar is completely dissolved. Add the extracts and the red food coloring. Remove from heat. When cool, place in a clean container with a tightly fitted lid and refrigerate.
