“I have recently had the pleasure of trying a dish at Juban’s that still resonates with me and is now my favorite.  It’s called ‘Bayou Pearls’. Of course, being in the fine jewelry business, I was immediately drawn to the name of the dish. Flash-fried pearls of Louisiana crabmeat with roasted red pepper and tasso, wrapped in angel hair pasta finished with a lemon, basil beurre blanc. The dinner prelude comes to the table in a shallow dish with two round prepared crabmeat ‘pearls’ resting in the lemon, basil beurre blanc. On top of the pearls is a latticework of crispy angel hair pasta that creates an interesting table presentation and lends a nice contrast to the soft consistency of the ‘pearls’.
