“Fried seafood. One, fried shrimp at Sammy’s Grill. Why? Because I love fried shrimp and they love me. Sammy’s does about as good a job on fried shrimp as anyone in this town. I think people over-spice seafood. It’s such a delicate meat, but people put so much stuff on it that it buries it. My second one is any fried fish at Louisiana Lagniappe—usually black drum. Hell, everybody’s already killed all the redfish. It’s always super fresh, always hot, and always perfect—no exceptions. They also use a light breading, not too heavy.
