Minty Mojitos

The crisp, clean taste of mint, a splash of white rum and refreshing lime make the Mojito a champion cool-down drink for summer months. It’s sweet and not too strong, perfect for an afternoon on the porch swing or to accompany a backyard barbecue. Originating in Cuba, this highball has a storied history—some say it dates back to the 16th century and a drink called El Draque, named after Sir Francis Drake. The Cuban drink was made with tafia, an early kind of rum that was harsh and bitter; the spearmint and sugar, abundant on the Spanish colony, was added to disguise the unpleasant taste. Ernest Hemingway was a particular lover of the Mojito, and frequented La Bodeguita del Medio in Havana, which was one of the first bars to serve the modern Mojito. Taste one and you’ll see why this delicious cocktail has survived for centuries.

Ingredients:

1 bunch of clean, fresh spearmint leaves

1 cup sugar

8 limes, juiced

1 bottle white rum

1 liter club soda

Ice cubes

In large bowl, muddle sugar and spearmint until well combined. In a large pitcher, combine sugared mint leaves with lime juice, rum and club soda, and stir together. Pour over ice cubes in highball glasses, straining out mint. Serves 8.
