Jicama Slaw
1/3 cup rice vinegar
3 Tbsp. lime juice
1 tsp. fresh lime zest
2 Tbsp. honey
1/2 tsp. salt
2 tsp. Sriracha hot sauce
1/2 cup vegetable oil
1 Tbsp. fresh chopped cilantro (optional)
4 cups shredded cabbage
2 cups grated jicama
1/2 cup chopped green onions
1 cup grated carrots
1/2 cup dried cranberries or golden raisins
1. In a small mixing bowl, whisk together vinegar, lime juice, lime zest, honey, salt, hot sauce, oil and cilantro, if using. Set aside.
2. In a large bowl, combine the cabbage, jicama, green onions, carrots and dried cranberries.
3. Pour the dressing over the vegetables and mix everything well.
4. Cover the slaw and let it chill for at least an hour before serving.
