Garlic and Herb-scented Couscous
Serves 6.
1 box couscous
2 cloves minced garlic
3 Tbsp. olive oil
1 tsp. chopped fresh parsley
Ľ tsp. dried oregano
Ľ tsp. dried mint
Ľ tsp. salt
Ľ tsp. pepper
1. Prepare the couscous according to package directions.

2. In a saucepot, heat the olive oil and garlic over medium heat for one minute or until the garlic begins to sizzle.
3. Remove the pot from the heat and add the herbs. Allow the mixture to cool completely.
4. Drizzle the infused oil over the couscous and season with salt and pepper. Serve warm or at room temperature.
