Freshening up Fresh

Pat Fellows has big plans for his Fresh Salads + Wraps, the popular Main Street Market healthy fast-food counter. Fellows purchased a used truck at auction in New Orleans recently and is having it retrofitted in order to join Baton Rouge’s growing mobile food truck army. “We’ll be serving basically the same menu as the downtown location,” Fellows says, “but we’ll probably be rolling it out in stages.” The truck will serve not only as a mobile eatery and advertisement for his downtown location, but as a means of scouting out a place to locate a second standing Fresh Salads eatery. “With the truck, I can find out where people want me to be, rather than just guessing,” he says.
