For the blue cheese lover, this Bistro Byronz appetizer is a real palate-pleaser—a plate of fresh-fried potato chips, smothered in a warm, creamy blue cheese sauce, all topped with green onion and, you guessed it, more blue cheese. The unsalted chips make for a starchy balance to the tart nuttiness of the cheese. Simple, yes, but totally satisfying.
