Every year, around the time of the LSU vs. Florida game, Tony’s Seafood receives high demand for a meat that normally they don’t stock much of: Alligator. It’s no surprise to manager Beth Miller, who says that the yearly run is understandable, considering the high spirits that surround the annual SEC face-off. What better way to cheer on the Tigers than by symbolically chowing down on the enemy? Tony’s stocks up well before the game; Miller says that by mid-week, they have about a half-ton of gator meat ready to go at $6.99 per pound. Gator is a mild meat that adapts well to most recipes for pork, beef and veal, and requires no real special preparation. Tony’s sells it pre-tenderized, although Miller recommends marinating it overnight to ensure maximum tenderness.
