Cucumber Salad
Serves 6
1/2 cup red onion, thinly sliced
2 English cucumbers, thinly sliced
2 Tbsp. honey
1/2 cup rice vinegar
1/2 tsp. kosher salt
2 to 4 tsp. Sriracha sauce, to taste
2 Tbsp. sesame oil
1 Tbsp. toasted sesame seeds
1. Slice the red onion and place in a small bowl.
2. Pour ice water over the onions and set them aside for 10 minutes. This will help to take some of the pungent strong flavor out of the raw red onion.
3. Drain the onions and place them in a large mixing bowl.
4. Add in the thinly sliced cucumbers and toss them together.
5. In a small mixing bowl, whisk together the honey, rice vinegar, salt, Sriracha and sesame oil.
6. Pour the dressing over the cucumbers and onions, cover, and set them in the refrigerator to chill for an hour.
7. Place the salad in a serving dish and sprinkle the top with toasted sesame seeds to serve.
