You’ll fare well with rich, Old World mates like Barolo or Tempranillo, or lamb’s classic buddy, Syrah. Select three for the table and invite your guests to sample each as they savor rosy slices of lamb set off by sides like beet and mint salad and garlic mashed potatoes.
