Black Rice

4 1/2 cups of water
1/2 tsp. salt
2 Tbsp. butter or olive oil
2 cups black rice

1. In a large pot with a tight-fitting lid, bring the water to a rolling boil.
2. Add the salt and olive oil or butter.
3. Stir in the black rice, reduce the heat to low and cover.
4. Cook the rice covered for 20 to 30 minutes, checking occasionally to make sure that the water hasn’t boiled out. Add an additional half cup of water to the rice as it is cooking if this happens.
5. Once the water has cooked out and the rice is tender but still has a bit of a bite to it, turn off the heat completely. Keep the rice covered and allow the rice to steam for an additional 10 minutes before serving.
