Bistro Byronz
Originally opened in the 1970s, Bistro Byronz was named after the owner’s son Byron, who was receiving medical treatment in Texas at the time. To give the name a little flair, owner Mike Kantrow changed the moniker from “Byron’s” to “Byronz”.
When Kantrow’s children reopened the restaurant on Government Street in 2006, they gave it a modern look and name by adding “Bistro.” The “Byronz” part still had strong name recognition.
So, how is the name pronounced? There is no right answer, owner Emelie Kantrow Alton admits. The question comes up often. “Bye-runs or Bye-rones are the most popular versions,” she says. “The people who come in are much more firm in their pronunciation than we are.” bistrobyronz.com
