Native culinarians are satisfying the craving for genuine Louisiana flavors across the country. In an article from April Capochino Myers, chefs like Sam Bayliss and David Guas are bringing their wealth of knowledge of state flair and flavor to new restaurants. Guas is the owner of the Arlington, Va-based Bayou Bakery Coffee Bar and Eatery. For him, the challenge is getting his team on board with the state’s history and culture. “You can’t expect everyone to absorb fire and passion about a state they didn’t grow up in,” he says. However, his business has filled a niche in Arlington. “It would not be as popular and do as well in the state it is celebrating,” he says. “People are so hungry … outside of the state for quality Louisiana food that is legit.
