Barbecue food truck takes to the streets

Where can you find cochon de lait—along with chicken, ribs and sausage—waiting for you on a street corner? New food truck Big Los’ Chicken n Ribs aims to please with a menu of delicious, fresh-made barbecue. Racks of smoking meat make it easy to follow your nose to owner Carlos Decuir’s truck, where you can enjoy everything from pulled pork to whole barbecued chicken.

Decuir, who holds down a day job in the insurance industry, was driven to start the food truck through passion. “I’ve been cooking since I was 14,” he says. “I love to cook.” He worked in restaurants throughout high school in Lafayette, and the rubs and seasonings he uses at his truck come from years of experimentation. Through the years he kept his passion alive as a hired cook on the side, cooking for family and friends at events or at tailgating parties—but on Feb. 1, Big Los’ started rolling. The truck made popular appearances at several downtown parades, and Decuir hopes to find some regular spots to set up soon. In the meantime, you can follow the truck on Facebook by clicking here.
