Adventures in French Toast
For whatever reason, French toast gets short shrift. Pancakes seem to command the world’s respect and enthusiasm. They’re central to weekend breakfasts and are routinely shaped into cute little animals at restaurants. But French toast is infinitely more interesting because its main ingredient is bread. With every variety and texture of bread, French toast takes on a different personality. You can’t say that about pancakes.
I know I go on and on about the Farmers Market, but when it comes to sourcing ingredients for French toast, there are few places that offer such comprehensive components. The recently opened Forte Grove bakery from nearby Plaquemine features buttery brioche (in the shape of a traditional sandwich loaf, no less. Just ask them.) Smith Creamery provides milk and country butter. The Potager features country eggs (and lovely breads to boot). And if you can forego maple syrup in exchange of something local and sticky, try John and Betty Chenier’s fresh honey.
