Warm Curried Fruit

From the December 2014 issue.
Serves 6.
2 cups fresh pineapple, cut into chunks
2 cups fresh or frozen peaches, cut into chunks
2 cups fresh pears, cut into chunks
1 cup fresh or frozen cranberries
4 Tbsp. butter
½ cup light brown sugar
1 tsp. ground cinnamon
¼ tsp. ground allspice
2 tsp. ground curry
1. Heat the oven to 375 degrees and butter a casserole dish with one tablespoon of the butter.
2. Melt the remaining butter. In a large mixing bowl, toss the butter, brown sugar and spices over the fruit.
3. Pour the fruit mixture into the buttered dish and bake for one hour, stirring every 15 minutes to prevent the top from becoming too brown.
4. Remove from the oven and serve.
