Update on Pat’s Cajun Seafood & Steak
Chef Jude Huval is ready to serve Baton Rouge, but is asking future guests to be a little more patient.
Huval, who is the chef and owner at Pat’s Cajun Seafood & Steak, anticipates the restaurant on Jefferson Highway will be open by the first of December. He says the restaurant is “pretty much complete” and that he is just waiting on a few things to be finished.
The restaurant is the third Pat’s location, which originated under the name Pat’s Fisherman’s Wharf in Henderson more than 60 years ago via Huval’s parents, Pat and Agnes.

“I grew up in the restaurant business,” Huval says. “I lived in Pat’s all my life.”
Huval’s sister and brother-in-law, Nancy and Ricky Perioux, opened Pat’s of Henderson in Lake Charles 30 years ago. Huval previously told 225 Dine that the reasoning behind building a Capital City location was that both restaurants saw customers from the Baton Rouge area.
The new Pat’s will be a bit smaller than the other two locations with room for about 150 patrons. The interior boasts brick walls and a rustic feel. The restaurant will feature live entertainment Tuesday-Thursday 6 p.m.-9 p.m. Huval says Pat’s Cajun Seafood & Steak will have business hours of Sunday-Thursday 11 a.m.-9 p.m. and Friday-Saturday 11 a.m.-till.
“I’ve been getting lots of calls of people asking me when it’s going to open,” he says. “They’re ready to come eat some gumbo, and I’m ready to share some Cajun food and culture with them. I can’t wait.”
