Making a dish flavorful with Delightful Palate
If you want a flavorful meal but have little time to cook it, Lili Courtney has you covered. The culinary instructor has been working with the LSU AgCenter’s Food Incubator, creating gluten-free culinary condiments under the brand of Delightful Palate. These sauces feature natural ingredients and can be used as marinades, glazes or vinaigrettes that kick up the flavor of a quick meal.
So far, Delightful Palate has three flavors: wild mayhaw berry, stonefruit nectar and balsamic garlic honey. 225 Dine asked Courtney to give us some tips on what dishes would work best for each.
Courtney says her wild mayhaw berry marinade has a mix of heat and sweet and works well with a kale salad or as a glaze on salmon and pork tenderloins. This one is also good for roasted vegetables.

The stonefruit nectar has peach and apricot undertones. As summer approaches, this would go best with spinach and strawberry salads or as a chicken marinade.
She calls her balsamic garlic honey marinade her “workhorse.”
“It’s a go-to,” she says. “It works on anything from Caprese salad to flank steaks and shrimps on the grill.”
