Bananas Foster

3 ripe bananas‚
4 Tbsp. butter
1 cup light brown sugar
1 Tbsp. vanilla
1/4 tsp. cinnamon‚
2 to 3 oz. bourbon or dark rum

1. Peel the bananas, slice them down the middle lengthwise, then cut those pieces in half.
2. In a heavy skillet, melt the butter.
3. Add the brown sugar and cook, stirring constantly to prevent the sugar from burning.Cook until all the sugar crystals have dissolved.
4. Add the bananas, vanilla and cinnamon.
5. Saut the bananas 1 to 2 minutes or until they are tender but still a little firm.
6. Remove the skillet from the flame and carefully add in the bourbon or rum.Use a match or flint to carefully ignite the Bananas Foster.Quickly and carefully stir everything around to extinguish the flame.
7. Serve the warm Bananas Foster over your favorite vanilla ice cream.
