Heads up: Galatoire’s Bistro hosting wine dinner Oct. 16
Galatoire’s Bistro (Map it!) will showcase wines from the Chappellet Winery with a four-course meal, prepared by Executive Chef Kelley McCann, Wednesday, Oct. 16, at 7 p.m. The Chappellet wines have a more than four-decade history and are cultivated from fruits off the rocky slopes of Napa Valley’s Pritchard Hill.
The five-course menu kicks off with a seared scallop with Yukon Gold vichyssoise and green apple and leek slaw paired with a Chenin Blanc. The second course features a pan-roasted arctic char with warm sautéed arugula and frisée, pickled Chioggia beets, tri-colored carrots and walnut-infused vinaigrette paired with a chardonnay. The third course will be braised pork belly with sweet potato gnocchi, crispy Vidalia onion haystack and chocolate red wine sauce paired with a signature Cabernet Sauvignon. The main course is a grilled venison rack with Chanterelle mushrooms and a blackberry demi-glace, paired with “Pritchard Hill.” A final course of seasonal berries, a puff pastry and elderflower crčme fraîche will round out the dinner.
