Tailgate Brunch – Wow fellow fans on game day with a morning menu on the grill
A quick tour of campus before a big game suggests folks spend hundreds of dollars—if not more—and countless hours planning their weekly tailgating events. Most of these tailgates revolve around a barbecue pit and every kind of grilled meat imaginable.
So here’s a tailgate menu that offers more than the usual burger or hot wings. It’s an upscale but easy brunch that will have your fellow tailgaters pea-green with envy. The dishes are easy to do ahead and transport, and they are ideal for serving to all your out-of-town guests who may be in for the game.
The menu starts off with a classic morning cocktail: a Salty Dog. Folks who hang out on campus overnight may need a little hair of the dog to set their morning off just right. A Salty Dog is a refreshing blend of grapefruit juice and a splash of vodka served in a salt-rimmed glass. We added a bit of triple sec and lime to jazz it up a bit. If a salted glass isn’t your thing, serve the drink without the salt and it becomes a Greyhound.

For the main course, Tracey has created a delicious and easy Grilled Boudin Frittata. The egg mixture can be whipped up before you head out to tailgate and stored in a container with a lid so you don’t have to worry about transporting eggs that may crack in the cooler. Once you have your grill set up, it’s easy to assemble and cook.
Orange-scented Palmiers are a simple and sweet French-style pastry that will wow your friends and may become one of your new favorite pastries to serve for any special occasion. The frozen puff pastry dough makes these foolproof to create, and they are particularly appealing first thing in the morning.
The Grilled Apples with Maple Pecans and Yogurt are a great addition to this brunch. The dish is a lovely balance of fruit and nuts along with a tangy yogurt that finishes off the meal. It’s a great way to keep you satisfied and fueled up for the long day ahead.
