Lemony Garlic Shrimp – Serves 6

1˝ lbs. large shrimp, peeled and deveined
2 Tbsp. olive oil
˝ tsp. crushed red pepper flakes
1 Tbsp. lemon zest
˝ cup green onion bottoms
˝ cup green onion tops
2 cloves minced garlic
Ľ tsp. fresh thyme
Ľ tsp. fresh rosemary
Ľ cup fresh lemon juice
Ľ cup dry white wine
Ľ tsp. sea salt or more to taste

1. Rinse shrimp and set aside.

2. In a large skillet, heat the olive oil along with the pepper flakes and lemon zest for 15 to 20 seconds over medium-high heat.

3. Add in the green onion bottoms and sauté for 1 minute.

4. Stir in the garlic for an additional 15 to 20 seconds and then fold in the shrimp.

5. Sprinkle in the fresh herbs, lemon juice and wine and sauté 3 to 5 minutes, stirring to make sure the shrimp cook evenly.

6. The shrimp are done when they are no longer opaque in color and are firm, but still tender.

7. Season with a little salt to taste and serve.
