A different twist on cabbage

As legend has it, the New Year’s Day meal has to feature a green in order to exorcise potential financial demons in the coming year. Maybe we all need a double dose this week. My menu often features fried chicken or pork roast, black-eyed peas, corn bread, greens (collard, turnip or mustard) and sometimes, this family favorite, a tangy side called hot slaw. It’s a great foil for pork, particularly, and it’s also great for tailgating.

Hot slaw

Fill a gallon jar/container with:

1 chopped head of green cabbage

1 chopped head of red cabbage

1-2 chopped green bell peppers

1 chopped red bell pepper

1 chopped yellow onion

2 15-ounce cans diced tomatoes

Salt and pepper to taste.

Then, fill cider vinegar to the top of the gallon jar. Let sit overnight. Enjoy.
