“The Bleu Cheese Chips (homemade chips drizzled with a creamy béchamel bleu cheese sauce) were somewhat of an evolution. As we were developing our menu with assistance from friends, colleagues and others, we were looking for unique appetizers that would complement our entrée selections. We also wanted to recast one of our items that was certainly a top seller in our original restaurant—our home-fried chips. We came upon the idea of bleu cheese on our chips. This story is not unlike many where we have taken items that were proven successes in the past for us and have brought them back to life with a slight twist for the new dining environment.”
