First Louisiana restaurant could open by the end of 2016

Louisiana could see its first Corner Bakery Cafe location by the end of next year.

The fast-casual restaurant chain serves breakfast, lunch and dinner items. The menu includes paninis, salads and pastas. Currently, Corner Bakery Cafe is looking for multi-unit franchise operators to expand the business into Alabama, Arkansas and Louisiana.

Corner Bakery Cafe vice president of franchise development Gregg Koffler says the restaurant has a presence in Texas, Mississippi and Georgia. Now, it is time for Corner Bakery to spread across more of the South.

“The target markets in Louisiana would be Baton Rouge, New Orleans, Lafayette and Shreveport,” Koffler says. “We would like to see a franchisee develop the Louisiana market. We hope to have that deal signed by the end of the year with the first [Louisiana] store open toward the end of next year.”

Already, Koffler says there is a lot of interest, and he has “talked to a number of folks” about franchising opportunities. Corner Bakery’s goal is to double the national franchisee footprint in the next two years, according to a press release.
