Promoting her new book Trim & Terrific Diabetic Cooking has popular cookbook author and TV personality Holly Clegg traveling a lot this summer. Whether it’s to New York City for Fox & Friends and the Today Show, or to Phoenix, Minneapolis or Denver for local cooking segments, Clegg often finds herself with just a few days of rest at home. The first thing she does back in Baton Rouge is stock up at the grocery store for a couple days of R&R and, of course, healthy home-cooked cuisine.
“People put too much pressure on themselves,” Clegg says. “If a recipe calls for something I don’t have, I just leave it out. Cooking is about creativity anyway. Never go back to the store.”
