Fat Cow Burgers and Salads set for LSU area

Construction has started on Fat Cow Burgers and Salads, a new restaurant set to open just outside the South Gates of LSU later this spring. Doug Hosford, the chef and one of the owners of Fat Cow, says the restaurant will feature freshly ground hamburgers, hand-cut fries, and salads topped with everything from grilled salmon to spiced pecans. Hosford, who lives in Natchez, Miss., says he spent 18 months developing the best possible burger for Fat Cow. “We went through 300 different recipes,” says Hosford, who sampled burgers at restaurants from San Diego to Virginia in the name of research. High-quality hamburger restaurants have come back in vogue, thanks to chains such as Five Guys Burgers and Fries and In-N-Out Burger. Burgersmith, a Lafayette-based chain, is set to open in the Acadian-Perkins Plaza this spring. Hosford, who worked as a chef across the South, says this shows the enduring popularity of hamburgers. “Hamburgers don’t go out of style,” he says. “And people are putting much more emphasis on food.” Fat Cow will take up 2,590 square feet in the Highland Village Shopping Center, in a space that had been occupied by Dean-O’s and Calendar’s Restaurant. —Timothy Boone (Photo courtesy Fat Cow Burgers)
