Abita Beer Blondies with Caramel Icing

Yields 16 pieces.

1 stick (1/2 cup) softened butter
1 cup light brown sugar
2 eggs
1 Tbsp. vanilla
2/3 cup Abita Amber beer
1 cups flour
1/4 tsp. salt
1/2 tsp. baking powder
1/3 cup chopped toasted pecans

1. Heat the oven to 350 degrees and line an 8×8-inch pan with non-stick aluminum foil.
2. Cream together the butter and brown sugar in a bowl until fluffy.
3. Beat in the eggs and vanilla.
4. Sift together the flour, baking powder and salt.
5. Fold the dry ingredients into the wet and add the beer.
6. Stir until everything is combined.
7. Bake for 20 to 25 minutes or until set and a tester comes out clean.
8. Remove from the oven and allow the Blondies to cool slightly before pouring on the caramel icing.

For Carmel Icing:
4 Tbsp. butter
1 cup brown sugar
1/4 cup corn syrup
1 Tbsp. vanilla
3 Tbsp. Abita Amber beer

1. Melt the butter in a saucepot over medium heat.
2. Add the brown sugar and corn syrup and bring it to a simmer, stirring to prevent the mixture from burning.
3. Allow the mixture to simmer and keep stirring for 5 minutes.
4. Remove from the heat and carefully add the vanilla and beer. Note that this mixture will be very hot and the beer will bubble up, so be careful not to burn yourself.
5. Stir the icing for another minute and then carefully pour it over the Blondies.
6. Allow them to cool completely before cutting them into squares.
