Fęte Rouge announces menu for Lifetime Achievement Award dinner

Foodies and local culinary enthusiasts have less than a month to prepare for August’s Fęte Rouge. The main Food & Wine Fęte takes place at L’Auberge Casino & Hotel Baton Rouge Friday, Aug. 22, featuring more than 200 wines and area chefs putting their talents to the test.

However, the festivities begin the night before with a seven-course wine dinner honoring Grace “Mama” Marino Lifetime Achievement Award winner Jay Campbell. The event is also at L’Auberge Casino & Hotel, and begins at 6 p.m. with live entertainment. Dinner is served at 7 p.m. Tickets are $200 per person.

For the gathering, Chef David Dickensauge of Bin 77 is preparing passed appetizers, including Creole Devils on Horseback, marinated watermelon with aged Manchego and micro watercress, and a triple-seared beef tenderloin crispy flatbread.

At the dinner, Chef Eric Arceneaux of The City Club of Baton Rouge is preparing a wood-fired Baba Ghanoush with dry cured beef sausage for the first course. Dickensauge will prepare a saffron-infused tomato consummé for the second course. Chef Kelley McCann of Galatoire’s Bistro will serve a third course of fresh dandelion greens with spiced garbanzo beans. For the fourth course, Chef Jeremy Langlois of Houmas House Plantation is preparing Tahini-rubbed roasted black grouper. Chef Drew England of L’Auberge will serve the fifth course of chile and coriander-braised lamb steak. The dinner will finish with a fresh fig and pistachio Frangipane tart from Chef Don Bergeron.

This year’s Fęte also includes a Fęte Du Vin Friday at 6 p.m., giving patrons the opportunity to sample elite wines from around the world. Only 100 tickets are available at $200 per person.
