Dining In – Grilled Buffalo Sliders with Smoked Cheddar

Serves 6.

1 1/2 lbs. ground buffalo meat
1/2 tsp. kosher salt
1/2 tsp. freshly ground black pepper
1/2 tsp. onion powder
1/2 tsp. garlic powder
2 Tbsp. vegetable oil
2 cups grated smoked cheddar cheese

1. Combine the ground buffalo with the seasonings and divide the meat into 12 (2-oz.) patties.
2. Heat the grill to medium-high heat.
3. Brush the buffalo patties with vegetable oil and grill 3 minutes on each side.
4. Top the buffalo burgers with the grated smoked cheddar and close the lid of the grill. Let the burgers sit on the grill for another minute so the cheese melts, but be sure to remove them promptly to prevent them from drying out.
5. Serve each slider on a toasted bun topped with Creole Aioli and Roasted Corn Chow Chow.

Serves 6.

1 cup mayonnaise
1 clove minced garlic
1 tsp. fresh lemon juice
3 Tbsp. Creole mustard

1. Place all the ingredients into a mixing bowl and whisk everything together.
2. Cover and chill for a couple of hours before serving. This may be made a day ahead of time and will keep in the refrigerator for up to one week.
