A crisp, cool side – Iceberg wedge with perfect homemade dressing

Who doesn’t love a good wedge salad this time of year, especially one doozied up with slivers of summer vegetables, crumbles of smoky bacon and homemade blue cheese dressing? This salad is easy to assemble, fun to serve and it pairs well with all sorts of main courses, particularly grilled items. The dressing is one of my favorite creations. It’s pungent and creamy, and works just as well on spicy buffalo wings or with cold veggies. Enjoy.

Serves 4
Good quality blue cheese wedge, crumbled to measure ˝ cup, plus extra for garnish
˝ cup buttermilk
Ľ teaspoon garlic (optional)
Juice of one-half lemon
˝ teaspoon chopped fresh chives
1/8 teaspoon Kosher salt
Fresh ground pepper
1 head iceberg lettuce, core gently removed and sliced into quarters

For garnish:
4-6 slices cooked bacon, crumbled
One yellow squash, washed and julienned
One half red pepper, washed and julienned
Sliced fresh tomatoes

Add blue cheese and next five ingredients in a food processor and blend well. Plate each salad wedge, and drizzle with dressing. Top with crumbled bacon, and garnish plate with squash, peppers and tomatoes.
